Halal Guys Style Chicken and Rice

Walking along a bustling street in the center of Manhattan, you can smell the hundreds of different food cart options available for lunch. If you're lucky there won't be too long of a line and you can grab a plate from the Halal Guys or maybe find a good Shawarma place. If you're anywhere else that doesn't have these types of food available you're usually out of luck and have to settle for something from home or typical chain fast food restaurant food. But maybe you don't have to settle...

By making your own version of this chicken and rice dish along with that mystifying white sauce, you can have almost all the joy of eating from your favorite food cart anytime. An added benefit is you can reduce your sodium intake or avoid certain ingredients if necessary and you can save a lot of money by not eating out. So whether you're in the heart of the Midwest and can't get to a restaurant or in the center of Manhattan and just want to save some dough, try your hand at making this amazing Chicken and Rice dish.


Chicken:


Combine chopped garlic, coriander, oregano (fresh or dried), lemon juice, and a bit of olive oil to carry the spices in a bowl. Mix well. Divide this mixture in two. Half should go in a dish or bag with 2 Chicken breasts to marinade. The other half we will save for when we combine our rice and chicken to really make that flavor pop.

 
Be sure to thoroughly coat your chicken with the marinade. Consider tenderizing with a fork to allow the flavor to soak in better. Let this marinate in the fridge for at least an hour.

Sauce:



While you're waiting on your chicken, you can make your white sauce without which this dish would be lost. Combine all ingredients preferably in a resealable container making it easier to store. Mix well and save for later.



Rice:



You can also begin your rice during while waiting for the chicken. To do this place some butter in a fairly large frying pan. Add turmeric and cumin and mix well.



Add your rice, stir until well coated, and cook until lightly toasted (just a few minutes).



Next you will need to add your chicken bouillon and water. Cover and simmer for ~15minutes or until rice has absorbed all water.

Chicken +1 Hour:
Finally, you can work on finishing your chicken. Place chicken/marinade combo in a frying pan with around a tablespoon of olive oil.



Cook thoroughly. Once cooked remove from pan and cut into 1/2 inch cubes or desired size. Combine chicken, rice, and remaining marinade into pan. Mix well and cook until heated. If rice was made ahead, it will take longer, while if you just finished the rice you may just need to combine everything and it will be ready.



Serve:

You can eat your Chicken & Rice dish in a variety of ways. We stayed pretty simple, choosing to eat ours as just chicken & rice topped with white sauce. One option would be to fill a pita with mixture along with lettuce and tomato. Another option would be to eat more like a salad without the added carbs of bread. The options are limitless. Add hot sauce at your own discretion. Just be sure to finish your dish with the white sauce and Bon Appétit!
