Healthy, Simple, and Delicious Chicken Tortilla Soup

Spice up your meal plan this week without breaking your budget or your diet. Chicken tortilla soup packs a punch of flavor and is sure to leave you feeling satisfied while using budget ingredients. What You Need
2 Tbsp Olive Oil
1.5 Cup Diced Onion
1 Cup Diced Celery
1 Cup Diced Carrots
4 Cloves Garlic
1 Cup Diced Tomatoes
6 Cups Chicken Broth
8 6-in Corn Tortillas
6 Cups Tomato Juice
1.5 Lb Shredded Chicken
2 tsp Oregano
2 tsp Chili Powder
~1/2 tsp Salt & Pepper
Cilantro - to taste
Cheese of choice to taste
1 Medium Avocado
Food Processor or Blender
Stock Pot or Large Sauce Pan
Cutting Board & Chefs Knife & Pairing Knife
Let's Cook
Bake tortillas at 350 for 8-10 minutes or until crisp. Break into pieces and set aside.
Heat oil over medium heat. Add onions, carrots, and celery. Stir frequently until onions are translucent.
Add garlic and tomatoes. Continue cooking 2-3 minutes until tomatoes are soft.
Combine vegetables and 2 cups tomato juice in food processor or blender. Blend until smooth
Pour blended vegetables into large sauce pot or stock pot.
Add remaining juice, broth, chicken, oregano, chili powder, salt and pepper. Bring to a boil.
Reduce heat and simmer 10 minutes.
Serve warm, topped with crisp tortilla pieces, cilantro, cheese, and avocado (chunked or creamed for preference).
Optional:
Substitute additional broth for tomato juice if less tomato flavor is desired.
Broth can be made by combining bouillon with water.
Shredded more can be used in place of chicken.
This can be made in a crockpot.
Skip blending for a chunky style soup.
