While rhubarb recipes are traditionally sweet or revolving around dessert, we decided to try taking rhubarb into the savory realm. Rhubarb adds a fun flavor to this healthy soup that can easily be made into a vegan meal (just switch vegetable stock for chicken stock). It is quick and easy to make and incredibly affordable, especially if you have any home grown garden produce. Scroll down for a printable recipe. Steps: Put all ingredients minus spices into stock pot. Simmer for 15 minutes.  Add spices. Simmer additional 5-10 minutes. Eat and Enjoy! Embed

Strawberry rhubarb pie is a well known dessert than is a favorite of many. While we could stick to the basics of only pie for rhubarb, we wanted to branch out and find many more fun and tasty recipes that we could use our rhubarb in because really, how much pie can you eat?  Maybe that's not the right question... Here we are in the middle of May. For many in the upper Midwest, you may not have even planted your garden yet. This won't stop your perennial plants from sprouting though. If you're like us, you might even be ready to start your first harvest on the early growers. Our rhubarb came up in full force and when we went out to thin out the rhubarb, we noticed it was already going to seed. For those of you who have never grown rhubarb before, this flower can look especially alien. You might be thinking to yourself, "What do I do with this weird seed thing?" or "Do I need to let rhubarb go to seed?". Seeing rhubarb flowers is also disappointing, especially if you were hoping to harvest throughout the summer. Who only wants one rhubarb pie each year? Not me!
