What you'll need:
4 Egg Yolks (Keep the Egg Whites for another recipe - omelet, scrambled, a light version of mousse)
1/4 C Sugar
2.5 C Heaving Whipping Cream
1 Cup Semisweet Chocolate Chips

Makes 16 Servings
  1. Separate the yolks from the egg whites. Use your favorite method or watch the video above for directions on how to separate.
  2. Beat egg yolks with electric mixer on high for ~ 3 minutes or until they begin to thicken.
  3. Slowly beat in sugar.
  4. Heat 1 C whipping cream over medium heat until warm. Stir part of the warm cream into your egg mixture before combining the entire mixture in the saucepan once more. This is prevent eggs from scrambling or heating too quickly.
  5. Continue cooking over low heat ~5 minutes or until mixture begins to thicken. Stir constantly.
  6. Add chocolate chips. Stir until thoroughly melted.
  7. Cover mixture and refrigerate for ~ 2 or until chilled.
  8. In a chilled mixing bowl, beat 1.5 C heaving whipping cream until stiff peaks form. Best to whip on high speed.

  9. Fold chilled chocolate mixture into whipped cream.
  10. Spoon into serving dishes.
  11. Serve immediately or chill until ready to serve.
